Seitan broccoli stir-fry in spicy cashew dressing

Dressing instructions
  1. In a blender, combine all the sauce ingredients and blend on high speed for about 2 mins until completely smooth.
Stir-fry instructions
  1. In a small bowl, combine the broth, tamari, maple syrup, arrowroot flow and whisk until smooth. In a large non-stick skillet, heat the oil over medium-high heat.
  2. When it shimmers, add the seitan and broccoli to cook, stirring often for 3-5 mins until broccoli softens and turns bright green and the seitan starts to brown. Add the arrowroot flour and reduce heat to medium-low. Cook for about 3 mins more until ingredients are nicely coated with sauce.
  3. Spoon over steamed rice and drizzle (or drown) each serving with spicy cashew sauce.
Spicy cashew sauce

3/4 cup raw cashews
1/4 cup water
1/4 cup pure maple syrup (or honey)
2 tablespoons tamari
2 tablespoons lime juice
2 tablespoons of sriracha
1 teaspoon minced fresh ginger
Half of a garlic clove, minced
1/8 teaspoon salt

Stir-fry

1/4 cup vegetable broth or water
2 tablespoons tamari
1 tablespoon pure maple syrup
1 tablespoon of arrowroot flour (to thicken)
2 tablespoons of olive oil
8 ounces of seitan strips*
About 3 cups of bite-size broccoli florets
Steamed rice for side dish

*If you can’t find seitan, you can use tempeh instead.
